Super easy low-carb chocolate chip cookie recipe!

Literally the perfect combination of salty and sweet.

 

Ingredients: 

1. 3/4 cup coconut oil

2. 2/3 cup monk fruit sweetener

3. 2 eggs

4. 2 tbsp vanilla extract

5. 3 cups almond flour

6. 1/2 tsp baking soda

7. 2 tbsp sea salt flakes

8. As many chocolate chips as you desire (I I personally use sea salt pumpkin seed bark thins)

Instructions:

1. Pre-heat oven to 350

2. Add coconut oil and monk fruit sweetener in until combined

3. Add 2 eggs and vanilla extract, mix until combined

4. Combine almond flour, baking soda, and salt in a separate medium bowl

5. Add dry ingredients to wet ingredients and mix until combined

6. Fold in chocolate chips

7. Scoop about 20 cookies onto non-stick baking sheet and sprinkle the tops of each cookie with a pinch of sea salt flakes

8. Bake for 15 minutes

9. Let cool on cookie sheet for 20 minutes and enjoy!
