Not only are egg yolks super nutritious (containing all of the essential amino acids we need, as well a little bit of every nutrient we need to thrive) but the darker the yolk – the more nutrients it contains!

I’ve talked about the concept of “you are what you eat ate” before – and egg yolks are a perfect example of that.

The colour of the yolk actually comes down to the lifestyle of the chicken who laid the egg. 

From the more natural feed to actually being granted access to the outdoors during the raising processa chicken who receives more nutrients, which inevitably lay more nutrient dense eggs. 

Just another reason to choose local organic or free-range eggs!
